Why restaurant buildings need an evacuation plan

Assembly and mercantile occupancies combine high occupant loads with visitors who don't know the building. Plans should show public and staff routes, keep secondary exits visible (they're often behind kitchens or stockrooms), and assign staff roles for directing customers during an alarm.

How to use it

  2. Mark all exits on your floorplan, then draw primary evacuation routes from every room to the nearest exit.
  3. Add secondary routes for any area where the primary route could be blocked.
  4. Place ISO 7010 safety symbols: fire extinguishers, manual call points, first-aid stations, and the assembly point.
  5. Add the “You Are Here” marker for the wall location where the plan will be mounted — each mounting location needs its own oriented copy.
  6. Fill in the title block and emergency contacts, then print, laminate, and mount at eye level near exits and lifts.

Frequently asked questions

Do small restaurants need a posted evacuation plan?

Even where a written plan isn't federally mandated (10 or fewer employees), local fire codes for assembly occupancies frequently require posted evacuation diagrams, and occupant-load rules still apply. Posting a clear map is inexpensive insurance either way.

Where should evacuation maps be posted in a restaurant?

Near the entrance, by tills/host stations where staff congregate, in the kitchen, and beside any exit that isn't obvious to the public. Staff briefings should cover guiding guests to both exits.

How does occupant load affect my exits?
